Why Your Cookies Spread Too Thin (The Real Reasons, Ranked)

Flat, thin, overly-spread cookies have several possible causes, and most troubleshooting guides list all of them with equal weight — which isn't that useful when you're trying to figure out which one is actually happening in your kitchen. 1. Butter that's too warm (the most common cause by far)

Butter has a melting point around 90–95°F (32–35°C) — well below room temperature in a warm kitchen. If your butter was melted, or even just very soft, before it went into the dough, it starts spreading in the oven before the structure (flour, egg proteins) has a chance to set. The fix: use butter that's cool but pliable — you should be able to press a dent into it with your finger, but it shouldn't be shiny or greasy-looking. 2. Too little flour relative to fat

This is usually a measuring problem, not a recipe problem. Weighing flour on a kitchen scale removes this variable entirely; if you don't have one, spoon flour into the measuring cup and level it with a knife rather than scooping directly from the bag.

3. Overcreaming the butter and sugar

Creaming incorporates air, which is good up to a point — but overcreamed butter and sugar (much longer than the 2–3 minutes most recipes intend) incorporates too much air and warms the butter through mechanical friction, both of which push toward more spreading. If you're using a stand mixer on medium-high for several minutes because the recipe felt vague about timing, this is worth reconsidering.

4. A hot baking sheet

Placing raw dough onto a sheet that's still warm from a previous batch gives the butter a head start on melting before the cookie even reaches the oven's heat. This is a real factor, but it's a smaller one than the first three — worth ruling out last, and easily fixed by running the sheet under cool water or swapping to a second sheet between batches.
